How to make Hot Honey
Makes about 120ml

120ml local honey
2 to 3 tsp dried chilli flakes

Heat the honey in a saucepan over a low heat. Add the dried chilli flakes, barely simmer for 1-3 minutes (don’t boil) and remove from the heat.
Leave to infuse for about 5 minutes before sieving into a jar to cool. Seal with lid once completely cold.
Option: add 1 tbsp cider vinegar
