60ml lemon and lime sugar syrup
2 tsp matcha powder
2 tbsp aquafaba
Sparkling water, to top up
You’ll need 2 champagne coupes
Pour the lemon and lime syrup into the shaker, add the matcha powder and aquafaba and give a shake.
Strain into the 2 coupes.
Spoon foam on the top.
Top up with a little sparkling water.
To make lemon and lime sugar syrup
Juice of 2 lemon
Juice of 2 limes
4 tbsp water
Place all the ingredients into a saucepan and bring to the boil, reduce the heat to a simmer and simmer for 4 to 5 minutes. Leave to cool, pour into a sterilised bottle, seal and leave in the fridge.
