This recipe is from my IGTV series Easy Italian and this one of my go – to pasta sauces, though I am known to serve it with a raost fillet of haddock or cod too!
For the pesto – makes 120ml
60g pistachio nuts, shelled and roughly chopped
1 garlic clove, peeled and sliced
60g rocket, washed
120ml extra virgin olive oil
2 tbsp freshly grated parmesan
Salt and freshly ground black pepper
To prepare the pesto, blend all the ingredients in a pestle and mortar to form a smooth paste and check the seasoning, adding a little more oil to the pesto to form a dip.
