Strawberry Mojito Carafe

Makes 1 Litre

For the strawberry syrup
200g caster sugar
300ml water
100g strawberries, washed and hulled

8 lime slices
4 sprigs of mint
100g strawberries, washed, hulled and halved
Ice
120ml white rum
100ml strawberry syrup
500ml sparkling water
5 to 6 strawberries, washed and left whole
1 tall sprig of mint

To prepare the syrup, place the sugar and water into a saucepan and bring to the boil, reduce the heat and simmer for 6 to 7 minutes until a light syrup forms.
Add the strawberries and simmer for 3 minutes, switch off and leave to cool completely.
Muddle the lime slices, with the mint sprigs and strawberries.
Pour the rum into the carafe and then add the strawberry syrup.
Add the muddled strawberries, lime and mint.
Add a few more strawberries and a tall sprig of mint.
Top with sparkling water and serve.
