Watermelon skewers

Makes 8 medium size skewers

For the dressing
200g strawberries, washed and hulled
4 tbsp rum
3 tbsp icing sugar
50ml orange juice

For the skewers
4 slices watermelon
200g feta
25 seedless red grapes
20 mint leaves, to thread

8 wooden or metal skewers or even long straight sprigs of rosemary

For the dressing, add all the ingredients into a blender and blend until smooth. Pour into a jug and chill. If you like it smooth, pour it through a sieve.
For the skewers, dice the feta into cubes large enough to be threaded on your skewers without breaking.
Peel and dice the watermelon in 3cm squares.
Thread the skewers with watermelon, feta, red grapes and mint leaves. Continue until all the skewers are complete. Pile them up on a platter and serve with the chilled strawberry rum dressing.
